With summer in full swing, our garden is thriving with heirloom tomatoes. I’m constantly thinking of new dishes to utilize them and showcase their beautiful colors and flavors. When Mori-Nu Silken Tofu approached us to create a recipe for them I was so excited and had the perfect dish in mind. I’ve always enjoyed tofu dishes and love how versatile and easy tofu is to work with. It’s wonderful raw or cooked and is perfect for hot or cold weather recipes.
I was eager to try out Mori-Nu Silken Tofu and was amazed to find out that it has such a long shelf life and doesn’t require refrigeration until opened. Mori-Nu Silken Tofu is a low-fat and heart-healthy vegetable protein. It’s a great alternative to eggs and dairy. The texture is as the name suggests, silky smooth! It’s light and delicate, yet leaves you feeling satisfied and full. Compared to other tofu brands, the smoothness is what really makes this brand shine.
In our house we’ve been making a variation of this tofu poke recipe for years. It’s perfect for summertime when it is hot out and you don’t want to turn on the stove. All ingredients go in raw and just need a little stir. It is vegan and vegetarian, but full of flavor and nutrients. My husband always requests it and since it’s so simple to make always oblige!
Tofu Tomato Poke Bowls
2 boxes of Mori-Nu Silken Tofu Firm or Lite Firm
1.5 pounds heirloom tomatoes (or other fresh tomatoes)
1/2 red onion
4 green onions
1/2 bunch cilantro
1/4 cup soy sauce
1/8 cup olive oil
1 tablespoon sesame oil
1/4 cup shelled edamame
1 sheet of nori (seaweed)
2 cups sushi rice
Start off by cooking your sushi rice. We have a rice cooker do the work for us, or you can cook it on the stove top.
While the rice is cooking, dice the tomatoes into small pieces, approximately 1/3 inch wide. Dice the red onion, chop the green onion and cilantro, then combine all produce into a large bowl.
Add soy sauce, olive oil and sesame oil to the bowl and lightly stir to mix.
Next, dice the Mori-Nu Silken Tofu into small (approximately 1/2 inch) cubes and add it to the bowl as well. Gently fold all of the ingredients together.
Cut your sheet of nori into small, thin pieces, approximately 1/2 inch in length. I use kitchen scissors for this, or you can chop it on a cutting board. Set aside.
Once the rice is done cooking, separate it evenly among 4 bowls and then top them with the Tofu Tomato Poke. Garnish with shelled edamame and finish it off with the strips of nori. Enjoy!
